Another saver to try is vinegar (red wine, white wine, cider, varietals such as sherry) and hot sauce. I find a few drops of Tabasco brightens and rescues with actually making the food spicy hot.

Yet another saver to try is foods with umami (meaty taste). Soy sauce, tomato paste, dried seaweed, anchovies, mushrooms.

For dishes such as the one you described, you could also try using a cup of V8 as part of the cooking liquid.
