I am attempting to make enough pea soup to feed exactly four people, with no leftovers.

As dried peas appear to be directly descended from Napoleon (la soup du jour de gloire?) this is something of a challenge.

I think I've cracked it, though:

One small hambone or a handful of cooked, diced ham (omit if desired)

1 1/2 C dried green peas
2 medium carrots, chopped
2 stalks celery, chopped
2 3 C veggie broth
4 6 C water
1/4 C onion flakes
2 bay leaves
1 t Pepper
2 T Ozark seasoning

Bring to a boil, reduce to a simmer, stir every so often for 3 hours or until the peas are correctly mushed)

So far so good ...

Exactly four servings. Happy slurping has ensued.

I can only make this soups in batches of 1 million litres, so I am properly amazed at this feat of four bowls only.

I admit to curiosity about this Ozark seasoning.

"No leftovers" is a REALLY tricky thing for pea soup. No pease porridge in the pot, nine days old? I remember one wickedly broke winter where we kept a pot of beans-and-ham-bone soup going on a simmer for a couple of weeks, adding more beans and water as it got low.

I'm impressed at your achievement.

I am overwhelmed with admiration. The only quantity of soup I have ever made is "too much" (but I'm big on reheated, or even cold, soup for breakfast) so hitting it so accurately is brilliant.

It's that time of the year so we've had several roadkill peasants recently - and soup made with peasant stock afterwards.
