How to store half bricks of tofu:

In a ziploc which you have put some clean water into on top of the half brick and then squeezed as much air as possible out of, so you can see your tofu and change its water occasionally and possibly even, you know, USE IT.

Look, I don't have that many moments of genius in the kitchen, I like to gloat when they happen.

[1] By which I, I hope obviously, do not mean "you fools, you madmen, you utter failures as human beings, YOU STORE YOUR TOFU WRONG ETA: WRONGLY, OK MEAGAN?", but rather "I can't possibly be the only person for whom this widely used method is not working, right?"

[2] I am persuaded that it is this problem which caused me, for years, to be firmly of the opinion that "vegetarians don't EAT tofu. Vegetarians BUY tofu.[3]"


[3] Which their long-suffering roomates/partners/wives must then chivvy out the door in all its dirty-rainbow stinking inglory, six weeks later, because the vegetarian "isn't touching that!". But I'm not bitter.

So, wait: if there are Whole Foods in Canada and they're making money, where does the Whole Foods guy get off saying that if we had a functional healthcare system, it would hurt his business? I mean, if A then not B, how come both B and A as soon as you go far enough north? Does it have something to do with magnetic fields?
